PANEER 65 FRIED RICE
Preparation time 5 minutes
Cooking time 10-15 minutes
Serving 2

Ingredients
2 tbsp Oil , तेल
1 tsp Mustard seeds, सरसों के दाने
1-2 Green chillies, chopped , हरी मिर्च
1 inch Ginger, chopped, अदरक
1 sprig Curry leaves, कड़ी पत्ता
200 gm Paneer, पनीर
1 medium Onion, chopped, प्याज
3 tbsp Tomato ketchup , टमेटो केचप
1 heaped tbsp Fresh Tomato puree , फ्रेश टमेटो प्यूरी
Salt to taste, नमक स्वादानुसार
2 cloves Garlic, chopped , लहसुन
1 Green chilli, chopped, हरी मिर्च
2 cups Pre-cooked Rice , पका हुआ चावल
½ tsp Degi red chilli powder, लाल मिर्च पाउडर
A few Coriander leaves, धनिए के पत्ते

METHOD:
1.In a large Wok or kadhai, add oil let it heat properly and then add mustard seeds, green chillies, ginger, curry leaves and saute it for a minute now add paneer cook until light golden brown in colour.
2. Now add onion, saute until translucent and then add the tomato ketchup, fresh tomato puree, salt and cook for 3-4 minutes.
3. Add in the chopped garlic, green chilli and mix it properly. Now add the pre-cooked rice and toss it properly with light hands.
4. Once mixed properly add in the degi red chilli powder, coriander leaves and mix everything one last time and serve hot.

SINGAPORE FRIED RICE
Preparation time 5 minutes
Cooking time 10-15 minutes
Serving 2

Ingredients
2 tbsp Oil तेल
1 Star anise , चकरी फूल
1 Dry red chilli, break in half , सूखी लाल मिर्च
1 inch Ginger, chopped , अदरक
1 tbsp Garlic, chopped, लहसुन
¼ cup Cabbage, chopped , पत्ता गोभी
¼ cup Carrot, diced , गाजर
¼ cup Broccoli, small florets , ब्रोकली
1 heaped tbsp Madras curry powder , मद्रास करी पाउडर
2 tsp Vinegar , सिरका
8-10 whole Cashew nuts , काजू
1 tsp freshly ground Black pepper , काली मिर्च
2 cups Pre-cooked Rice , पका हुआ चावल
Salt to taste , नमक स्वादानुसार
1 tsp Sugar , चीनी
1 whole Spring onion, chopped, प्याज पत्ता
1 tbsp Toasted Sesame oil , तिल का तेल

For MADRAS CURRY POWDER
2 tbsp Garam Masala, गरम मसाला (For Recipe Link: https://youtu.be/f5_E0SknU7Q)
1 tbsp Turmeric, हल्दी

METHOD:
1. Heat oil in a large wok/kadhai, let it heat properly and then add star anise, dry red chilli, let it crackle and then add ginger, garlic saute for a minute.
2. Now add cabbage, carrot, broccoli and saute on high flames for 3-4 minutes or until charred.
3. Then add the madras curry powder, vinegar, cashew nuts and sprinkle some water, freshly ground black pepper and mix everything properly and then add the pre-cooked rice.
4. Toss the rice on high flames with light hands and let it cook for 3-4 then add salt, sugar, chopped spring onion and lastly finish it up with toasted sesame oil, mix everything properly and serve hot.

ITALIAN FRIED RICE
Preparation time 5 minutes
Cooking time 10-15 minutes
Serving 2

Ingredients
2 tbsp Olive oil , जैतून का तेल
1 tbsp Garlic, chopped , लहसुन
1 small Capsicum, chopped , शिमला मिर्च
Salt to taste , नमक स्वादानुसार
1 cup Boiled Corn (boil it with salt and turmeric powder) , उबला हुआ मकई
1 tsp dry Oregano , सूखा ऑरेगैनो
1 tsp Chilli flakes , चिल्ली फ्लेक्स
2 sprig Fresh Oregano , ताजा ओरेगैनो
2 cups Pre-cooked Rice , पका हुआ चावल
1 heaped tbsp Butter , मक्खन

METHOD:
1. Heat a large wok/kadhai, add olive oil and let it heat properly, then add chopped garlic, capsicum, salt and saute it for 3-4 minutes.
2. Now add the boiled corn (add salt and turmeric powder in water while boiling the corn)and toss it once, then add dried oregano, chilli flakes, fresh oregano and mix everything well.
3. Then add the pre-cooked rice and toss it with light hands and let it cook for 4-5 minutes.
Now finish it up with a big spoon of butter.
Serve hot.
