Jini Dosa is the Mumbai roadside vendor’s answer to Indian pizza! Dosas cooked in butter are topped with a succulent and spicy mixture of veggies, which is also cooked in butter and topped with lots of cheese.

I don’t know why is it named Jini Dosa but the only thing that comes to my mind when I listen Ginnie is a Jin coming out of a magical lamp. And this might be the reason of naming it Jini dosa, as it is really magical in taste.

And if you are not sure if your Dosa will be able to bear and cook the veggies and that it will tear apart on the tawa itself. Then do not worry it does not happen. You have to be little cautious and in case if you do not feel confident enough to do that here is a trick.

Mix all the ingredients in a pan and let it cook on slow flame till tender. Directly apply it on dosa grate the cheese and it’s done. But make sure you let dosa cook well before spreading the mixture on it.
